When we speak of monocultivar we refer to an oil produced exclusively from a single variety of olives. We produce the Coratina monocultivar with the Cold Extraction technique which gives an unmistakable flavor, and makes our oil unique in taste, aromas while maintaining the precious nutritional properties, essential source of Omega 3.
The color of this oil is typically greenish yellow, on the palate it releases a rather fruity flavor and a harmonious bitter and spicy aftertaste. On the other hand, on the nose, it releases herbaceous notes but also hints of almond and artichoke.

Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress
The harmonious bitter and spicy taste of good extra virgin olive oils is due to the presence of special antioxidant substances called "Olive Oil Polyphenols".
These substances contribute to the protection of blood lipids from oxidative stress, and the daily intake of 20 grams of an extra virgin olive oil containing 25 mg% has a beneficial effect.
